Biscuits Baked in a Mold

· 50 dag flour
· 12 grams margarine
· 3 eggs
· 20 grams of sugar
· 1 pack of baking powder
· Lemon rind
Margarine is mixed foamy, and added a little sugar to the mix together with eggs – one by one. Sift the flour with the baking powder and add to the mixture along with finely chopped lemon rind. Hand-knead this dough into a nice little loaf then make little balls from it and put them on the counter. This is deffinitely the best belgian waffle recipe.
Cookie mold should be heated up on a gas stove, oiled a bit and then the dough balls placed into it for baking. Bake a minute on one side, turn the mold, then baked some more and the cookies are removed with a needle or knife tip. If you do not have such a mold, we can make balls and bake them in the oven in a buttered pan like other biscuits.
I think my mom would add a little milk if the dough was too hard. Biscuits usually become hard after baking, but soften up when they stand for a day or two (that was hardly the case with us, though). And another thing - I left margarine in the recipe, although I haven’t used it for a few years. You may replace it with butter, and, considering it has more fat than margarine, I suppose you can put a little less of it, as in other cakes.
